Temp going to red quickly is common in the corsa on hot days, easiest fix is to bridge the fan to a manual switch, it's what I've done in my own

Do the revs drop if in gear and coasting?
If it doesn't fit,
force it,
If it breaks,
It needed replacing anyway

Only thing it could be is sticking cable or idle control valve

What engine is it? What happens when it's in neutral, if normal does the revs go up if clutch is engaged?
If you rev it in neutral do the revs stick
If it doesn't fit,
force it,
If it breaks,
It needed replacing anyway

Yeah common issue of the sports icv, you could try cleaning it but there awkward to get at so if it was me I'd just replace to save having to take it twice
If it doesn't fit,
force it,
If it breaks,
It needed replacing anyway

Had that too, a few times, change the ICV, cooling wise I have replaced the pump, rad, hoses and gaskets and skimmed the head, that cured it,.
